Ground pork stuffed eggplant

Ingredients: 


Eggplant 3pcs.
Ground pork 1/2 kilo
Mozzarella or Parmesan cheese
Tomato sauce 12 cup
Garlic
Onion
Salt and pepper to taste
Oil

Instructions:

Cut the eggplants lengthwise and scoop the flesh out, leave at least a quarter of inch meat into the skin.
Spray with olive oil, and grill with skin side down at 180 degrees for 30 mins.
Saute the ground pork, eggplant meat, tomato sauce, chopped onions, and garlic until cooked.
Season with salt and pepper.
Let the filling cool down and fill it on the baked eggplant shells.
Top it with mozzarella and bake for 10 to mins on high. Just enough for the mozzarella to brown a bit just like a pizza!

Serve with toast bread and beer!
