Crispy Chicken Skin and Chicken Oil

This a 2 in 1 post since i'll be making crispy chicken skin and chicken oil.

Chicken skin for appetizer or pulutan and chicken oil which is super versatile I use it on most of my dishes, specially fried rice!



CRISPY CHICKEN SKIN

INGREDIENTS:

1 kilo chicken skin

1 tbps salt

2 tbsp vinegar

1 tsp ground black pepper

200 ml water

INSTRUCTIONS:

Put the chicken skin in a NON-STICK PAN or WOK, make sure it's non stick or else it's gonna stick! Medium heat and add water, salt, vinegar and ground black pepper.

Wait till all the water evaporates and all those fat rendered. Mix occasionally to make sure everything is evenly cooked and crispy.



Sprinkle with some cajun spice mix (optional) before serving. Cheers!



CHICKEN OIL

INGREDIENTS:

Chicken oil

1 whole garlic with skin

1 onion

1 thumb sized ginger

1 tbsp salt

3 tbsp red annatto seed


INSTRUCTIONS:

Crush the garlic with skin on. Chop the onion and ginger, keep the skin.

Fry everything including the skins and annatto seed in medium heat for around 5 mins.

Let it cool to infuse the flavour more into the oil and strain. Then transfer to your favorite oil container.
