Jollibee Style Fried Chicken (Pang Negosyo)

Jollibee style. Pang negosyo o pang ulam.




INGREDIENTS:


Curing and Marinating (BRINE)

1kg chicken cut into pieces (drumsticks, wings, breasts, thighs)

2g Curing salt / Prague powder (pink salt)

5g Accord phosphate

50mg ascorbic acid powder

20g Mixed MSG and Salt

3g durog na paminta

65ml cold water

Seasoning and Breading

3g Ground black pepper

200g all-purpose flour

50g cornstarch

10g garlic powder

2g five spice powder

5g cumin



COOKING INSTRUCTIONS:

1. Patuyuin ang mga piraso ng manok gamit ang paper towel (pat dry)

2. Ibabad ang manok sa BRINE (malamig na tubig, curing salt, accord phosphate, ascorbic acid powder) sa loob ng 3 minuto. 

Make sure you only use the exact amount of the curing salt indicated in the recipe as sodium nitrite is dangerous in high dosage. Use of a kitchen scale is adviced.

3. Sunod, ihalo ang marinating ingredients (ordinary MSG and ground black pepper) nang mabuti. 

4. Marinate at room temp for 30 mins to 1 hour.

5. Mix breading and seasoning (ground black pepper, all purpose flour, cornstarch, garlic powder, five spice at cumin). Pagkatapos ay ihalo sa marinated na manok paisa-isa hanggang sa mabalot nang maigi. 




6. Initin ang mantika sa isang wok o malaking kawali/deep frier sa mainit na apoy hanggang umabot ang temperature sa 350°F. 

7. Ang manok ay kailangang lubog sa mantika at hindi crowded.

8. I-deep fry ng 12 minutes. Medium heat.






9. Ready to serve!
