We often cook this in the resto for our lunch as our suppliers gives us free aubergines or eggplants everytime they deliver our stocks.
I added prawns in this recipe which is optional. Just happen to have some frozen prawns in the freezer.
INGREDIENTS:
2 eggplants
380 grams pork mince / giniling
King prawns
2 tomatoes
1 onion
Garlic
Red chillies
Oyster sauce
Dark soy sauce
Fish sauce / patis
Sugar
Salt
Ground black pepper
INSTRUCTIONS:
1. Chop the onions, garlic, tomatoes, eggplants and chillies then set aside. Soak the eggplants in water with a pinch of salt.
2. Saute the onions, garlic and tomatoes. Add a dash of patis for the umami flavour.
3. Add the minced pork, a teaspoon of salt, sugar, oyster sauce and dark soy sauce and saute until brown.
4. Add the eggplants, mix then cover and let it cook for 10 minutes.
5. Once the eggplants are soft, add half of the red chillies and prawns. Cook for another 2 mins.
6. Give it a good mix and top it of with the remaining red chillies for garnish.
Best served with hot white rice!
