I bought a whole chicken yesterday and butchered it as I'm going to use the breast part for my Pad Thai special recipe, so I was thinking what to do with those other parts.
Then I remembered that I still have that wonderful chipotle marinade from my Nachos recipe, so now I'll be bbquing those leg quarters and wings in the oven!
What we need:
- Chicken leg quarters and/or wings
- Chipotle Marinade
- Dark Soy Sauce
- Salt
- Sugar
- Ground black pepper
- Apple juice or lemon soda (7up/Sprite)
- Garlic Powder
How to:
Mix everything in a bowl
Put in a ziplock bag and marinate overnight or 1 hour if you're in a hurry
Place them in a rack skin side down. We want to cook the inside first.
Put them in a pre heated oven at 225C. Set oven to grill mode at for 5 mins. Then lower down to 200C for another 20 mins
Flip the chicken over and continue to grill for another 15 minutes, this time skin side up.
Wings out first
Simmer the remaining marinade in a pan
Add a tbsp of brown sugar
A pinch of flour and some water to thicken the sauce
Leg quarters should be ready by now
Cut some lemon on the side for that nice and refreshing citrusy flavour! You can Squeeze the lemon or calamansi on the sauce or on the chicken itself.
