Noche Buena Leftover Sisig

Usually after Christmas, most household will have tons of leftovers. This year we cooked pork belly lechon roll, and as much as we would like to eat everything, our own belly are just too full hahaha.

So with some leftover ingredients and the lechon belly just waiting inside the fridge, what we're cooking today is the infamous Sisig, an appetizer but can alo be a main dish. It's so versatile that you can actually use any meat and turn it into this delicious meal.

Almost everything used in this recipe are either leftovers or excess ingredients from other viands.



What we have:

Meats

Lechon belly
Ground Pork
Chicken liver
A few strips of bacon

We also need:

2 Onions
Garlic
Ginger
Scallions
Chillies
Egg
Mayonnaise
Soy sauce
Knorr Liquid Seasoning
Salt and pepper to taste


Chop your meats and vegies

Chicken liver

Saute and brown the ground pork and bacon

Make sure your pan is sizzling hot to give it a good sear

Add some salt and pepper

Then add the chicken liver

Mash a few chicken liver but leave some chunks behind

Add 3 tbsp soy sauce then garlic and ginger

Then add the lechon belly

Now the onions - we want the onions crunchy so don't overcook it

Add some butter (optional)

Egg in the middle

Top with chopped scallions

Lastly the Knorr liquid seasoning for that great umami taste and nostalgic smell of Padi's Point hahaha

Put your mayonnaise and chillies for finishing touches, you can also add the chillies while sauteing if you cant it extra spicy.

Serve with calamansi or lemon and ice cold beer!
