My grandma said that the secret to this wonderful dish is how you saute the pork and she is not wrong.

Get your pork and vegetables ready
Saute the pork very well, use our special chicken oil if you have. Then add a bit of salt.
On a separate pan, heat some oil to fry the eggplant.
Add onions and tomatoes.
Fry both sides
Add 1Tbsp of bagoong alamang
Saute more.
Add green chillies.
Serve with freshly steamed rice!
