Chicken and Pork Adobo sa Gata (Adobo in coconut milk)

Adobo is a traditional Filipino dish that is typically made with either chicken or pork (or sometimes both). The dish is cooked in a tangy and savory sauce that is usually made with soy sauce, vinegar, garlic, and other seasonings.

Adobo sa gata or Adobo in coconut milk is a variant of Adobo, this is cooked with "Gata" coconut milk to make it rich, creamy, and slightly sweet taste with a distinct coconut flavor.

I learned this easy recipe from a friend who is from Bicol, a region or province in the Philippines where coconut is very abundant and its creamy milk is used in almost all of their dishes.

This version has baby corn which is my 3-year-old's favorite.

How to:


Chop an onion, garlic, and baby corn(optional)

Cut the chicken and pork to desired sizes. I used chicken thighs and pork belly.

Pan-fry the chicken and pork first until brown and have a good sear, this will help enhance its flavor.
Saute with garlic, black pepper, and onions

Add coconut milk

Add vinegar and soy sauce and simmer for 30 minutes or until tender

I added some dark soy sauce and knorr liquid seasoning for better color and flavor.

I also added some baby corn for my son :)

Chilli flakes for some kick!

You can reduce the liquid by cooking it more to make it dry, but this time I want it to be saucy.
